- Simmer the pork bones in 2.5 L of water, skimming foam, for about 2 hours until the broth is clear and savory.
- Add the pork loin for the last 30 minutes, then remove and slice thinly.
- Season the broth with fish sauce and sugar.
- Fry minced garlic in oil until golden; set the fried garlic and oil aside.
- Cook the ground pork in a little broth until just done and break it into small pieces.
- Soak or boil the rice noodles until tender, then divide among bowls.
- Top with sliced pork, ground pork, bean sprouts, spring onions, and cilantro.
- Ladle hot broth over the noodles, finish with fried garlic and oil, and serve with lime wedges.
