  1. Bring 1 L of water to a boil in a heavy pot.
  2. Whisk the millet flour with the remaining cold water and the potash solution until smooth.
  3. Pour the slurry into the boiling water, stirring constantly so no lumps form.
  4. Cook over medium heat, beating vigorously with a wooden spoon or paddle, until the mixture thickens into a stiff, elastic paste, about 15–20 minutes.
  5. Add a splash of hot water if it becomes too dry, and keep stirring until it pulls cleanly from the sides of the pot.
  6. Shape into smooth mounds and serve hot with a vegetable, okra, or peanut sauce.
