طريقة التحضير
- Mix the flour, 1 tsp salt, and lukewarm water into a soft dough, knead until smooth, cover, and rest for 30 minutes.
- Finely chop the onion and pepper; grate or finely chop the tomatoes. Sauté the onion in the oil, add the beef, then the pepper, tomatoes, tomato paste, remaining salt, black pepper, and pul biber, and cook until the liquid reduces.
- Divide the dough into 6 balls and roll each into a thin round.
- Cook the rounds one by one in a dry hot pan until lightly blistered on both sides.
- Crush the garlic into the yogurt with a pinch of salt.
- Stack the breads, spreading meat filling between layers, and finish with a generous layer of garlic yogurt.
- Melt the butter until foaming and pour it over the yogurt. Serve warm, cut into wedges.
