  1. Simmer the pork bones in 2.5 L of water, skimming foam, for about 2 hours until the broth is clear and savory.
  2. Add the pork loin for the last 30 minutes, then remove and slice thinly.
  3. Season the broth with fish sauce and sugar.
  4. Fry minced garlic in oil until golden; set the fried garlic and oil aside.
  5. Cook the ground pork in a little broth until just done and break it into small pieces.
  6. Soak or boil the rice noodles until tender, then divide among bowls.
  7. Top with sliced pork, ground pork, bean sprouts, spring onions, and cilantro.
  8. Ladle hot broth over the noodles, finish with fried garlic and oil, and serve with lime wedges.
