Preparación
- Mix the flour with 1 tsp salt, then work in the water to form a firm dough. Knead until smooth, cover, and rest for 30 minutes.
- Finely chop one onion and 2 garlic cloves. Mix with the ground beef, coriander, pepper, and 1/2 tsp salt.
- Soak the split peas for 20 minutes, then simmer them until just tender. Sauté the remaining onion in the oil, add the remaining garlic, tomato paste, peas, and a little water, and cook into a thick sauce. Season with the remaining salt.
- Roll the dough thin and cut it into about 8 cm squares. Place a spoonful of filling in the center of each, pinch the opposite corners together, then seal the side corners to form a small pouch.
- Arrange the dumplings in a steamer lined so they do not stick, and steam for 35 to 40 minutes until the dough is cooked through.
- Stir crushed garlic into the yogurt with a pinch of salt.
- Serve the mantu topped with the yogurt, the split-pea sauce, and a sprinkle of dried mint.
