Préparation
- Season the chicken with salt and set aside.
- Blend the tomatoes, onion, garlic, ginger, and Scotch bonnet into a smooth paste.
- Heat the oil in a pot, add the tomato paste and blended mixture, and cook until the raw smell fades.
- Add the chicken and stock, bring to a simmer, and cook until the meat is nearly tender.
- Whisk the peanut butter with a little hot broth until smooth, then stir it into the pot.
- Simmer gently, stirring often, until the sauce thickens and the chicken is cooked through.
- Adjust the salt and serve hot with rice, fufu, or boiled plantain.
