  1. Peel the potatoes and grate them on the fine side of a box grater. Squeeze out as much liquid as you can, then let the liquid stand and pour off the water, saving the starch that settles at the bottom.
  2. Dice the bacon and onion. Fry the bacon until the fat renders, add the onion, and cook until soft and lightly golden.
  3. Stir the grated potatoes with the reserved starch, bacon and onion, eggs, milk, flour, salt, and pepper until evenly mixed.
  4. Spread the mixture in a greased baking dish. Bake at 180°C for about 1 hour 15 minutes, until the top is deep golden and the center is set.
  5. Rest for 10 minutes, then cut into squares and serve hot, traditionally with sour cream.
