  1. Pound the steaks until very thin, then season both sides with salt and pepper.
  2. Set up three shallow dishes: flour, beaten eggs mixed with minced garlic and chopped parsley, and breadcrumbs.
  3. Coat each steak in flour, shake off the excess, dip in egg, then press firmly into the breadcrumbs so the coating sticks evenly.
  4. Heat the oil in a wide skillet over medium heat until hot but not smoking.
  5. Fry the milanesas in batches until deep golden on both sides, about 2 to 3 minutes per side.
  6. Drain on paper towels and season lightly with salt.
  7. Serve immediately with lemon wedges.
