  1. Bring 1 L of the water to a boil in a heavy pot and stir in the salt.
  2. Whisk about 150 g of the maize meal into the boiling water to make a thin porridge and cook for 5 minutes, stirring.
  3. Sprinkle in the remaining maize meal and stir vigorously with a wooden spoon until the mixture thickens.
  4. Add the remaining water a little at a time only if needed, and keep stirring and turning the mass over medium heat for 10 to 15 minutes until it is smooth, stiff, and pulls away from the pot.
  5. Shape into mounds and serve hot with a stew or relish.
