Préparation

  1. Shred the cabbage, grate the carrot, and thinly slice the onion. Toss with vinegar, oregano, and a pinch of salt, then rest to make curtido.
  2. Mix masa harina with warm water and salt until a soft, non-sticky dough forms. Cover and rest for 10 minutes.
  3. Crumble the queso fresco and mix it with the refried beans.
  4. Divide the dough into 8 balls. Flatten each, add a spoonful of filling, and seal, then pat into a thick disk.
  5. Cook the pupusas on a lightly oiled griddle over medium heat for 3 to 4 minutes per side until spotted and cooked through.
  6. Serve hot with the curtido.
