Preparazione
- Thinly slice the shallots and garlic, and cut the spring onions and char siu into thin pieces.
- Heat the lard in a wok and fry the shallots until golden, then set half aside for garnish.
- Add the garlic and minced pork, season with salt, white pepper, and 1 tbsp light soy sauce, and cook until the pork is browned and just cooked through.
- Blanch the egg noodles briefly in boiling water, drain well, and toss with the remaining soy sauces, vinegar, and a spoon of the shallot lard.
- Divide the noodles among bowls, top with the minced pork, char siu, fried shallots, and spring onions, and serve immediately.
