- beef stock500 ml
- chicken stock250 ml
- ketchup1 tbsp
- Worcestershire sauce1 tsp

作り方
- Cut the potatoes into thick fries, rinse, and pat thoroughly dry.
- Heat the oil to 160°C and fry the potatoes until pale and soft, then drain and cool.
- Melt the butter, whisk in the flour, and cook briefly to make a light roux.
- Gradually whisk in both stocks, then add ketchup, Worcestershire sauce, salt, and pepper; simmer until the gravy is smooth and coats a spoon.
- Raise the oil to 180°C and fry the potatoes again until deep golden and crisp; drain and salt lightly.
- Pile the hot fries on a platter, scatter the cheese curds over them, and immediately ladle hot gravy on top.
- Serve at once so the curds soften but do not fully melt.
