  1. Peel and dice the potatoes. Peel and finely chop the onion. Cut the fish into bite-sized pieces.
  2. Boil the potatoes in salted water until just tender, about 12–15 minutes. Drain and set aside.
  3. In a pot, melt the butter and soften the onion over medium heat for 4–5 minutes. Stir in the flour and cook for 1 minute.
  4. Gradually whisk in the milk to make a smooth sauce. Simmer gently until slightly thickened.
  5. Add the fish and cook for 5–7 minutes until just flaky. Fold in the potatoes and season with salt and pepper.
  6. Warm through without mashing completely, so the fish and potato pieces stay distinct. Serve topped with chopped chives.
