• potatoes800 g
• plain flour150 g
• buttermilk150 ml
• butter40 g
• salt1 tsp
• black pepper1/4 tsp

1. Peel the potatoes. Boil half until tender, then mash them and leave to cool slightly.
2. Grate the remaining raw potatoes, then squeeze them firmly in a clean cloth to remove as much liquid as possible.
3. Mix the grated potato, mashed potato, flour, buttermilk, salt, and pepper into a soft batter.
4. Heat a heavy pan and melt a little butter over medium heat.
5. Drop spoonfuls of batter into the pan and flatten into small cakes. Fry until golden on both sides, adding more butter as needed.
6. Serve hot, traditionally with butter.
