Chicken Paprikash

- chicken, cut into pieces1.4 kg
- yellow onion300 g
- lard40 g
- sweet Hungarian paprika2 tbsp
- ripe tomato150 g
- green bell pepper1
- salt1 tsp
- water300 ml
- sour cream200 g

Yapılışı
- Cut the chicken into serving pieces and pat dry. Finely chop the onion, dice the tomato, and slice the green pepper.
- Melt the lard in a wide heavy pot over medium heat and cook the onion until soft and pale gold, about 8 minutes.
- Take the pot off the heat, stir in the paprika so it does not scorch, then return to the heat and add the chicken. Season with salt and turn the pieces to coat.
- Add the tomato, green pepper, and water. Cover and simmer gently until the chicken is tender, about 45 minutes, turning once.
- Whisk the flour into the sour cream, then stir in a ladle of hot cooking liquid to temper it.
- Stir the sour-cream mixture into the pot and simmer uncovered for a few minutes until the sauce is smooth and lightly thickened. Do not boil hard.
- Taste for salt and serve hot with galuska or egg noodles.
