- Bring 1 L of water to a boil in a heavy pot.
- Whisk the millet flour with the remaining cold water and the potash solution until smooth.
- Pour the slurry into the boiling water, stirring constantly so no lumps form.
- Cook over medium heat, beating vigorously with a wooden spoon or paddle, until the mixture thickens into a stiff, elastic paste, about 15–20 minutes.
- Add a splash of hot water if it becomes too dry, and keep stirring until it pulls cleanly from the sides of the pot.
- Shape into smooth mounds and serve hot with a vegetable, okra, or peanut sauce.
