  1. Dice the chicken and onion finely.
  2. Heat the oil in a pan, sauté the onion until soft, then add the chicken and cook until done.
  3. Add the rice, salt, pepper, and ketchup, and stir-fry until evenly coated. Divide into two mounds and keep warm.
  4. Beat the eggs with the milk and a pinch of salt.
  5. Melt half the butter in a nonstick pan, pour in half the egg, and cook gently until just set but still soft.
  6. Place one rice mound on the omelette, fold the egg over it, and slide onto a plate. Repeat with the remaining egg and rice.
  7. Spoon a little ketchup over each omurice and serve immediately.
