Method

  1. Melt the butter and let it cool slightly.
  2. Whisk the flour and salt, then beat in the eggs until smooth.
  3. Gradually whisk in the milk and water to make a thin, lump-free batter, then stir in the melted butter.
  4. Rest the batter for 30 minutes.
  5. Heat a lightly buttered crêpe pan over medium heat.
  6. Pour in a thin layer of batter, swirl to coat the pan, and cook until the edges lift and the underside is golden.
  7. Flip and cook briefly on the other side, then repeat with the remaining batter.
