Method

  1. Peel the plantains and slice them lengthwise into long strips.
  2. Fry the plantain strips in hot oil until golden on both sides, then drain on paper towels.
  3. Chop the onion, garlic, and bell pepper, then sauté them in a little oil until soft.
  4. Add the ground beef and cook until browned, breaking it up and seasoning with salt, pepper, and oregano.
  5. Stir in the tomato sauce, sliced olives, and raisins, then simmer until the filling is thick.
  6. Layer fried plantains and the beef filling in a baking dish, finishing with plantains.
  7. Beat the eggs and pour them over the top, then bake at 180°C until set and lightly browned, about 25 minutes.
