Sago Pancakes

Method

  1. Soak the sago pearls in water for 30 minutes, then drain well.
  2. In a bowl whisk together rice flour, sugar, and salt.
  3. Add coconut milk, water, and eggs to the dry mixture and whisk until smooth.
  4. Stir the soaked sago pearls into the batter.
  5. Heat a non‑stick skillet over medium heat and lightly brush with oil; pour about ¼ cup batter and spread thinly.
  6. Cook for 2‑3 minutes until the edges set, then flip and cook another 2 minutes until golden.
  7. Remove the pancake, repeat with remaining batter, and serve warm with coconut syrup or palm‑sugar sauce.
