Method

  1. Soften the butter. Separate the eggs, then beat the yolks with the sugar until pale and thick.
  2. Beat in the butter, then mix in the flour, sour cream, lemon zest, and salt until smooth.
  3. Whip the egg whites to firm peaks and fold them gently into the batter.
  4. Heat a horizontal spit over steady coals, or set a rotisserie over a strong heat source, and grease the spit well.
  5. With the spit turning continuously, ladle on thin coats of batter, letting each layer set before adding the next.
  6. Let some batter drip and bake into branches so the cake develops its characteristic tree-like spikes.
  7. Continue for several hours until the cake is deep golden, firm, and cooked through.
  8. Slide the cake off the spit and cool it upright before slicing.
