Préparation

  1. Rinse the banana leaves, briefly pass them over a flame or hot pan until flexible, then wipe them clean.
  2. Score the fish lightly, rub with salt, pepper, and lemon juice, and let it rest for 15 minutes.
  3. Finely chop the onion, tomato, garlic, chili, and parsley, then mix with the palm oil.
  4. Stuff and coat the fish with the vegetable mixture.
  5. Wrap the fish tightly in several layers of banana leaf and tie with leaf strips or kitchen string.
  6. Steam over boiling water, or cook on a grill over moderate coals, for about 40 to 50 minutes, turning once, until the fish flakes easily.
  7. Rest for a few minutes, then open the parcel at the table and serve with the cooking juices.
