  1. Rinse the rice, then cook it with coconut milk, water, salt, and knotted pandan leaves until tender and fragrant.
  2. Soak the dried chilies until soft, then blend them with shallots, garlic, and shrimp paste into a paste.
  3. Fry the paste in a little oil, then season with tamarind paste, palm sugar, and salt to make sambal.
  4. Fry the dried anchovies and peanuts separately until crisp.
  5. Boil or fry the eggs and slice the cucumber.
  6. Serve the coconut rice with sambal, anchovies, peanuts, egg, and cucumber.
