• lamb shoulder700 g
• lamb liver200 g
• sheep tail fat80 g
• onions300 g
• potatoes500 g
• salt1.5 tsp
• black pepper0.5 tsp
• water100 ml

做法

1. Cut the lamb, liver, and tail fat into small cubes and slice the onions. Peel and cube the potatoes.
2. Render the tail fat in a heavy pan over medium heat until the cracklings are golden, then remove the cracklings.
3. Add the lamb and fry until browned, then add the liver and cook briefly.
4. Add the onions and cook until softened and lightly golden.
5. Stir in the potatoes, salt, and pepper, add the water, cover, and simmer until the potatoes are tender.
6. Return the cracklings to the pan, toss, and serve hot.
