Method

  1. Peel the yam and cut it into uniform chunks.
  2. Place the yam pieces in a pot, add enough water to cover, and boil until very tender, about 15‑20 minutes.
  3. Drain the yam, reserving a little cooking water, and transfer the pieces to a large mortar or a sturdy bowl.
  4. Pound the yam with a pestle, adding a splash of the reserved water as needed, until the mixture becomes smooth, stretchy, and free of lumps.
  5. Shape the pounded yam into balls, serve hot with your favorite soup or stew.
