Method

  1. Peel the potatoes and cut them into even chunks. Strip the kale from any tough stems and rinse it well.
  2. Put the potatoes in a large pot, cover with salted water, and bring to a boil. Cook for about 15 minutes, until nearly tender.
  3. Add the kale to the pot and cook for another 8–10 minutes, until both potatoes and kale are soft.
  4. Heat the smoked sausage in a separate pan of simmering water for about 15 minutes; do not boil hard.
  5. Drain the potatoes and kale thoroughly. Mash them together with the warm milk, butter, salt, pepper, and nutmeg until coarse and well mixed.
  6. Slice the sausage and serve it on top of the stamppot, with extra butter if you like.
