- beef dripping or vegetable oil2 tbsp

Method
- Heat the oven to 220°C. Put the dripping or oil in a roasting tin and place it in the oven until very hot.
- Whisk the flour, eggs, milk, salt, and pepper into a smooth batter and leave it to rest for 10 minutes.
- Add the sausages to the hot fat and roast for 10 minutes, turning once, until they start to brown.
- Pour the batter around the sausages and return the tin to the oven.
- Bake for 25 to 30 minutes until the batter is well risen and deep golden. Do not open the oven early.
- Serve immediately, traditionally with onion gravy.
