  1. Thinly slice the shallots and garlic, and cut the spring onions and char siu into thin pieces.
  2. Heat the lard in a wok and fry the shallots until golden, then set half aside for garnish.
  3. Add the garlic and minced pork, season with salt, white pepper, and 1 tbsp light soy sauce, and cook until the pork is browned and just cooked through.
  4. Blanch the egg noodles briefly in boiling water, drain well, and toss with the remaining soy sauces, vinegar, and a spoon of the shallot lard.
  5. Divide the noodles among bowls, top with the minced pork, char siu, fried shallots, and spring onions, and serve immediately.
