Slice the eggplant and potatoes, then lightly fry or roast them.
Sauté the onion, brown the meat, then add the tomatoes and simmer 15 minutes.
Make a béchamel: cook butter and flour together, then whisk in the milk a little at a time.
Layer the potatoes, eggplant and meat sauce in a baking dish.
Pour the béchamel over the top and cover with the grated cheese.
Bake at 180°C (355°F) for 35 minutes until golden.
