Method

  1. Separate the eggs. Whisk the yolks with sugar, then stir in buttermilk, flour, baking powder, salt, and cardamom until smooth.
  2. Beat the egg whites to soft peaks and fold them gently into the batter.
  3. Melt a little butter in each cup of a hot æbleskiver pan over medium heat.
  4. Fill each cup about two-thirds full with batter and cook until the edges set.
  5. Turn each ball with a skewer, add a dab of butter if needed, and cook until golden and cooked through.
  6. Serve warm, traditionally dusted with powdered sugar and served with jam.
