Method
- Mix the flour with 1 tsp salt, add the warm water, and knead into a firm, smooth dough. Cover and rest for 30 minutes.
- Finely chop the onion and mix it with the beef, pork, remaining salt, pepper, coriander, cumin, and chili flakes.
- Stir in the cold water a little at a time until the filling is juicy and well combined. Chill while the dough rests.
- Divide the dough into about 20 pieces, roll each into a thin round, and place a spoonful of filling in the center.
- Pleat the edges tightly upward into a gathered top, pinching firmly so no filling can leak.
- Boil the khinkali in salted water for 10 to 12 minutes, until the dough is cooked and the filling is hot.
- Drain and serve hot, holding each dumpling by the top knot and eating the juicy meat first.
