Method

  1. Peel the potatoes, boil them in salted water until tender, then drain well and mash while still hot. Let the mash cool slightly.
  2. Mix the mash with the flour, eggs, and salt until a soft, workable dough forms.
  3. Bring a large pot of salted water to a gentle simmer. With wet hands, shape the dough into small dumplings.
  4. Simmer the dumplings until they rise to the surface and are cooked through, about 5 to 8 minutes, then drain.
  5. Dice the bacon and fry it in a wide pan until crisp. Add the butter.
  6. Add the dumplings and fry until lightly golden. Pour in the cream, simmer briefly until it coats the dumplings, season with pepper, and serve.
