Method
- Mix the flour, yeast, sugar, and salt in a bowl.
- Add the water and 1 tbsp olive oil and knead until a smooth, soft dough forms.
- Cover and let the dough rise in a warm place until doubled, about 1 hour.
- Divide the dough into 4 balls, rest 10 minutes, then flatten each into a thin oval.
- Stir the za'atar with the remaining olive oil to make a spreadable paste.
- Spread the paste over each dough oval, leaving a small border.
- Bake on a hot stone or tray at 230°C until the edges are golden and the topping is fragrant, about 8–10 minutes.
- Serve warm.
