Method
- Warm the milk until lukewarm, stir in the yeast and sugar, and let it stand until foamy.
- Mix the flour and salt, then work in the melted butter, egg, and yeast mixture to form a soft dough. Knead until smooth and let rise until doubled, about 1 hour.
- Finely chop the onion and cook it in a little butter until soft. Add the beef, salt, and pepper and cook until the meat is browned and the moisture has evaporated. Cool completely.
- Divide the dough into 12 pieces. Flatten each, place a spoonful of filling in the center, and pinch the edges firmly to seal.
- Arrange seam-side down on a lined tray, cover, and let rise for 20 minutes. Brush with beaten egg yolk.
- Bake at 190°C until deep golden, about 20 minutes. Cool slightly before serving.
