Method
- Mix the flour and salt, then work in the vegetable oil and water to form a smooth, firm dough. Cover and rest for 30 minutes.
- Finely chop the onion and garlic. Fry them in a little oil until soft, then add the beef and cook until browned.
- Stir in the cumin, coriander, cardamom, pepper, and a pinch of salt. Cook until the filling is dry, then cool.
- Roll the dough very thin and cut into squares or circles about 10 cm across.
- Place a spoonful of filling on each piece, fold into a triangle, and seal the edges firmly with a little water.
- Heat the frying oil to about 170°C and fry the sambusas in batches until deep golden and crisp.
- Drain on paper and serve hot.
