Swedish Yellow Pea Soup

Method

  1. Rinse the yellow split peas and put them in a large pot with the water.
  2. Add the salted pork, peeled and halved onion, marjoram, thyme, and bay leaves.
  3. Bring to a boil, skim off any foam, then lower the heat and simmer gently for about 1 hour 30 minutes, stirring occasionally so the peas do not stick.
  4. When the peas are soft and the soup has thickened, lift out the pork and onion.
  5. Discard the bay leaves and onion, shred or dice the pork, and return the meat to the pot.
  6. Season with salt and pepper, remembering that the salted pork is already salty.
  7. Serve hot with whole-grain mustard on the side.
