Bryndzové halušky

Method

  1. Peel the potatoes and grate them finely. Squeeze out as much liquid as possible.
  2. Mix the grated potatoes with flour, egg, and salt to form a soft, sticky dough.
  3. Bring a large pot of salted water to a boil.
  4. Press small pieces of dough through a halušky maker or cut small dumplings from a spoon into the boiling water.
  5. Cook until the dumplings float, then simmer for about 2 minutes and drain.
  6. Dice the bacon and fry it until the fat renders and the pieces are crisp.
  7. Toss the hot halušky with the bryndza until the cheese softens and coats them.
  8. Serve immediately topped with the fried bacon and a spoonful of the rendered fat.
