Method
- Dice the green peppers. Peel and finely chop the tomatoes.
- Heat the olive oil in a wide pan over medium heat and cook the peppers for 3–4 minutes until softened.
- Add the tomatoes, salt, pul biber, and black pepper. Cook until the tomatoes break down into a thick sauce, about 8–10 minutes.
- Crack the eggs into the pan and gently stir just enough to marble the yolks through the sauce.
- Cook over low heat for 2–3 minutes until the eggs are just set but still soft. Serve immediately from the pan.
