Turkish Chicken Pilaf

Préparation

  1. Put the chicken in a pot with water to cover, a pinch of salt, and simmer until cooked through, about 25 minutes. Reserve the broth and shred or cut the chicken into pieces.
  2. Rinse the rice until the water runs clear, then drain well.
  3. Melt the butter in a wide pot, add the finely chopped onion, and cook until soft.
  4. Stir in the orzo and cook until lightly golden.
  5. Add the rice and stir for 1–2 minutes so the grains are coated.
  6. Pour in 550 ml hot broth, season with salt and pepper, and bring to a boil.
  7. Cover, reduce the heat to low, and cook until the liquid is absorbed, about 15 minutes. Rest off the heat for 10 minutes.
  8. Fold in the chicken, fluff the pilaf gently, and serve warm.
