Method

  1. Bring the hot water and salt to a rolling boil in a heavy pot.
  2. Mix about 150 g of the maize meal with the cold water to make a smooth paste.
  3. Stir the paste into the boiling water and cook for a few minutes until it thickens into a thin porridge.
  4. Gradually sprinkle in the remaining maize meal, stirring hard so no lumps form.
  5. Cook over medium heat, stirring often, until the sadza is very thick and pulls away from the sides of the pot.
  6. Cover and steam on low heat for about 10 minutes, then beat again until smooth and elastic.
  7. If it is too stiff, loosen with a splash of the extra cold water; serve hot in mounds.
